Beer
Batter
I
got this recipe from an old friend, way back B.C. (before children). I love the flavor of beer batter, and seeing
this recipe reminds me that I need to make onion rings ASAP. (And beer-battered fish too. Mmmm.)
1
cup beer (It’s okay. If you don’t drink,
find a friend to drink the other half of the can/bottle.)

cup flour
1
½ tsp salt
2
tsp oil
2
egg whites
In
a mixing bowl, whisk together flour, oil, salt and beer. Cover loosely, let sit for 30 minutes. In a separate bowl, whip egg whites to firm
but not stiff peaks. Fold gently into
batter. Dip items and cook in 375 degree
hot oil until golden brown.
