With beef, don't forget about tacos! another mexican fave that we did just last night -- quesedillas. 1 cooked and shredded chicken breast, 1/2 c salsa, 2 T miracle whip (trust me), 1/2 tsp chili powder, 1 c mexican blend cheese. Mix, smooth over 1/2 small tortilla. Cook on griddle. Makes about 8 soft tacos, which is just enough to feed our family. We serve the with sour cream.

Do you actually bake your potatoes, or cook them in the microwave?

My wife rubs vegetable shortening on the outside of the skins so that they turn nice and crisp (She loves potato skins)

We are having marinated chicken on the grill, corn on the cob and salad from the garden. We are also having little banana splits with frozen vanilla yogurt for dessert! YUM. Is it 6 o'clock yet?? LOL. Great idea for a blog!
